Ingredients

  • 1 cup (250 ml) oil
  • 4 cakes pressed tofu (about 11/2 lbs/ 600 g in total), halved and pressed between paper towels to remove moisture
  • 2 stalks lemongrass, thick bottom parts only, outer layers discarded, inner parts minced
  • 1 finger-length red chili, deseeded and minced
  • 2 cloves garlic, minced
  • 1 teaspoon five spice powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper

Method Fried Tofu with Lemongrass and Five Spice Recipe (Đậu Phụ Chiên Sả)

1, Heat the oil in a wok or skillet over medium heat until hot. Deep-fry the tofu for about 2 minutes on each side until golden brown and crispy. Remove and drain on paper towels, then arrange on a serving platter.
2, Drain off all but 1 tablespoon of the oil in the wok or skillet. Reheat the oil over medium heat and stir-fry the minced lemongrass, chili and garlic until fragrant and tender, 1 to 2 minutes. Season with the five spice powder, salt and pepper and remove from the heat. Spread the mixture on top of the fried tofu and serve hot.
