2 cloves garlic, minced
1 cup (8 oz/250 g) diced fresh or canned tomato
1/2 cup (125 ml) chicken stock or fresh coconut juice
1/2 teaspoon sugar
Pinch of saltĀ 

Method Tomato Sauce (Sot Ca Chua)

Heat the oil in a skillet over medium heat and stir-fry the garlic until golden brown and fragrant, 1 to 2 minutes. Add the tomato and stir-fry for about 5 minutes, adding the stock or coconut juice. Mix well and bring the mixture to a boil. Reduce the heat to low, season with the sugar and salt, and simmer until the sauce is reduced by one-third or until the desired thickness is achieved. Remove from the heat and transfer to a serving bowl.
