Vietnamese Sausage (Xúc xích)

These dried sausages, called lap cheong in Cantonese, are sold in links about six inches long. They are deep reddish brown and are typically made from a mixture of pork, pork fat, and sometimes pork liver.

You can also find Vietnamese sausages made of duck liver or even chicken. These sweet, salty links are usually thinly sliced or cubed and added to a pot of rice as it steams, to soups, or to stir-fries.
