Ingredients Yellow Bean Sauce (Nuoc Tuong)

3/4 cup (4 oz/120 g) dried yellow soy beans, boiled and drained
2 tablespoons thick coconut milk 2 tablespoons ground roasted unsalted peanuts
2 teaspoons sugar
3 cloves garlic
1 finger-length red chili, deseeded
2 tablespoons sliced lemongrass
1 cup (125 ml) water
2 tablespoons oil

Method Yellow Bean Sauce (Nuoc Tuong)

Grind all the ingredients, except the oil, in a blender until smooth. Heat the oil in a skillet over medium heat and stir-fry the mixture until fragrant, then simmer for about 2 minutes and remove from the heat. Store in a sealed jar in the refrigerator.
