Description Marinated Grilled Squid Recipe (Mực Nướng)

Grilled meats and seafood are very popular in Vietnam. Marinated Grilled Squid (Muc Nuong) uses a flexible Marinade, which also works well with many other types of seafood or poultry prior to grilling.


  • 1 lb (500 g) fresh medium squids, body sacs only
  • 1/2 tablespoon salt
  • Sprigs of coriander leaves (cilantro), to garnish Fish Sauce Dip, for dipping
  • 1/2 teaspoon ground white pepper
  • 2 cloves garlic, crushed
  • 2 tablespoons oil
  • 1 teaspoon five spice powder
  • 1 teaspoon curry powder
  • 1 tablespoon minced lemongrass (from inner part of the thick end of the stalk)
  • 1 tablespoon black soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon sugar

Method Marinated Grilled Squid Recipe (Mực Nướng)

1, Make a lengthwise cut along each squid body sac. Open up and rinse the inside well. Score the flesh by making diagonal criss-cross slits across the surface. This allows the squid to cook very quickly. Slice into bite-sized pieces.
2, Rub the salt onto the squid pieces. Set aside for about 15 minutes, then rinse and drain.
3, Combine the Marinade ingredients in a bowl and mix well. Place the squid pieces in the Marinade, mix until well coated and marinate for at least 1 hour.
4, Grill the marinated squid pieces on a pan grill or under a preheated broiler using high heat until just cooked, about 2 minutes on each side.
5, Arrange the grilled squid on a serving platter and garnish with coriander leaves (cilantro). Serve hot with a bowl of Fish Sauce Dip on the side.
